Panch phoron is five whole seeds — cumin, fennel, fenugreek, black mustard and nigella (kalonji) — in equal measure. It is never ground and never a marinade; it exists to be crackled in hot fat, the first thing the ghee or mustard oil meets.
The blend is Bengali at heart but travels: in the Odia temple recipes hosted here it opens the dalma and the besara, poured sizzling over simmered lentils and vegetables. The trick is heat control — the tiny seeds burn in seconds, and burnt fenugreek turns the whole pot bitter. Count to the first crackle, then move the pan off the flame.
