Ingredients

Preparation

  1. In a clay or ceramic bowl, combine the freshly grated coconut, whisked curd, grated ginger, pounded green chili, and salt.

  2. Mix thoroughly with a spoon until the coconut absorbs the cultured curd.

  3. Heat the mustard oil in a small pan until smoking hot, then lower the heat slightly.

  4. Add the mustard seeds and dried red chili; allow the seeds to crackle and pop.

  5. Pour the hot sizzling mustard oil tempering directly over the coconut-curd mixture.

  6. Fold once gently to distribute the warm oil and serve cool as a soothing palate cleanser.

In the tradition

Nadiya Pachadi (nadiya meaning coconut in Odia) is served within the inner sanctum offerings of Jagannath Puri. The cooling nature of fresh coconut and cultured curd balances the sharp mustard seed pungency and warming spices found in companion dishes like Dalma and Besara.
