Kalkandu (Sugar Candy)

Rock-candy crystals, the gentle sweetening of kheers and prasadam mixes.

Kalkandu is crystallised sugar — large, translucent diamonds that dissolve slowly and sweeten gently. South Indian kitchens drop it into kheer and paal payasam, where its slow melt suits the long simmer, and it appears in prasadam mixtures and herbal conserves where a cooling, mild sweet is wanted.

It reads faintly milky-sweet next to jaggery’s molasses depth, which is why the two lead different kinds of sweets rather than competing.

Used in 1 recipe

  • Jaggery , Unrefined cane sugar, gur; the sweetener of payasams, pongals and temple offerings.
  • Milk Reduction (Kheer) , The long, scraped simmer that turns milk into payasam, kheer and akkara vadisal.
