Ingredients

  • 1 cup chana dal , soaked 1 hour, boiled tender with whole grains intact
  • 1 cup jaggery , grated
  • 3 tbsp water , for melting jaggery
  • 1/2 cup copra (dry coconut) , finely grated
  • 4 tbsp ghee , pure cow ghee
  • 1 tsp cardamom powder
  • 10 cashew , split
  • 1 pinch edible camphor (pacha karpooram) , tiny speck

Preparation

  1. In a thick-bottomed pan, melt the grated jaggery with 3 tablespoons of water over medium heat.

  2. Strain the melted jaggery syrup through a sieve to eliminate any impurities, then return to the pan.

  3. Add the cooked, drained whole chana dal and the grated dry coconut (copra) to the simmering syrup.

  4. Cook over medium-low heat, stirring frequently with a wooden spoon for 12 to 15 minutes, until the dal absorbs the jaggery and the mixture thickens.

  5. Heat the ghee in a small skillet; fry the cashews until golden-brown.

  6. Pour the hot ghee and cashews directly into the thickened dal halva.

  7. Stir continuously over low flame until the halva turns lustrous, glossy, and begins to pull cleanly away from the edges of the pan.

  8. Stir in the freshly ground cardamom powder and the speck of edible camphor.

  9. Remove from the heat and serve warm.

In the tradition

Legend connects this sacred sweet directly to Sri Vadiraja Tirtha of the Sodhe Matha in Udupi during the 16th century. Vadiraja would hold a tray of this sweet Bengal gram preparation above his head, and Lord Hayagriva (the horse-headed incarnation of Vishnu) would appear to partake of the offering, leaving a portion behind as sanctified prasadam.
