Ayurvedic Stewed Apples

A whole apple stewed soft with cinnamon, cloves and a little ghee; the famous ayurvedic breakfast-starter, gentle on the stomach and good for all three doshas.

Ingredients

  • 1 apple , sweet variety, peeled and diced
  • ¼ cup water
  • 1 tsp ghee
  • ⅛ tsp cinnamon powder
  • 2 cloves , optional
  • 1 pinch cardamom powder
  • to taste jaggery , optional

Preparation

  1. Melt the ghee in a small pan over medium-low heat.

  2. Add the diced apple and sauté for a minute to coat.

  3. Pour in the water, add cinnamon, cloves and cardamom, then cover and simmer 7–8 minutes until the apple is soft enough to mash.

  4. Stir to a rough compote, sweeten with jaggery if needed, and eat warm on an empty stomach.

In the tradition

This little dish has become ayurveda’s calling card in the West thanks to Dr. Vasant Lad’s cookbooks. The reasoning is simple: raw fruit in the morning asks a sleepy agni to work hard, while stewing with warming spices delivers the same sweetness pre-digested. A stewed apple is tridoshic-friendly when spiced this way, the cloves help kapha, the ghee and softness help vāta, and the sweetness soothes pitta.
