Snack · 15 min prep · 10 min cook · serves 4 Newly added

Ingredients

  • 500 g chhena (fresh curd cheese) , freshly split whole milk curd, drained in muslin for 30 minutes, soft
  • 1/2 cup nolen gur (date palm jaggery) , liquid or soft grated winter date palm jaggery
  • 1/2 tsp cardamom powder
  • 1 tsp ghee , for greasing molds

Preparation

  1. Place the soft drained chhena on a smooth marble board or wide platter.

  2. Knead vigorously with the heel of your hand for 5 to 7 minutes until completely smooth, lump-free, and fine oils begin to glisten on your skin.

  3. Divide the smooth chhena into two equal portions.

  4. Place one half of the chhena into a heavy non-stick pan; add the nolen gur (date palm jaggery).

  5. Cook over very low flame, stirring constantly with a silicone spatula for 4 to 5 minutes until the jaggery incorporates and the mixture turns warm, glossy, and slightly thick (do not overheat).

  6. Remove the warm cooked chhena immediately from the heat and transfer back to the platter.

  7. Combine the warm cooked chhena with the reserved uncooked raw chhena half and the ground cardamom powder.

  8. Knead the two halves together gently for 2 minutes into a unified, silky confectionery dough.

  9. Lightly grease traditional wooden or terracotta sandesh molds (chhaanch) with a drop of ghee.

  10. Press small balls of the dough firmly into the molds, then gently tap and peel to unmold the patterned sweets.

  11. Serve at room temperature or cool slightly before offering.

In the tradition

In Gaudiya Vaishnava mathas across Navadvipa and Mayapur, winter heralds the tapping of date palm trees for Nolen Gur. Blending freshly kneaded milk curds (kachagolla method) with this smoky, caramel-scented seasonal syrup produces Sandesh—a sweet representing the peak of sacred Bengali confectionery art.
