In the tradition
In the Sri Vaishnava temple kitchens of Srirangam and Tirupati, Kovil Puliyodharai is revered as the foremost travelling prasadam. The high concentration of wood-pressed sesame oil and concentrated tamarind acts as a natural preservative, keeping it fresh for days.
