Ghee-Roasted Makhana (Fox Nuts)

Lotus seeds roasted in ghee until crisp and tossed with rock salt and pepper, the classic light satvik snack, loved by fasting and meditation traditions.

Ingredients

  • 2 cups makhana (fox nuts)
  • 2 tsp ghee
  • ¼ tsp black pepper , coarsely ground
  • ¼ tsp rock salt

Preparation

  1. Warm the ghee in a wide pan over medium-low heat.

  2. Add the makhana and roast, stirring constantly, for 6–8 minutes until they are crisp and just beginning to gold.

  3. Sprinkle over the pepper and rock salt; toss for another 30 seconds off the heat.

  4. Cool completely, they crisp further as they cool, and store in an airtight jar for 2–3 days.

In the tradition

Makhana are the popped seeds of the lotus, the very plant the tradition holds up as the emblem of purity, growing clean out of the mud. Unsurprisingly they became the food of choice for vrats and sādhanā seasons: light enough not to dull the mind, roasting in minutes, and keeping their snap for days. Roast them low and slow; scorched makhana stay stubbornly chewy.
