Ingredients
- 4 cups milk , whole milk
- 1 cup curd (yogurt) , fresh, whisked
- 2 tbsp sugar , or to taste
- ¼ tsp black salt
- 1 apple , diced
- ½ cup grapes , halved
- ½ cup pomegranate , seeds
- 1 pinch cardamom powder
Preparation

Simmer the milk in a wide pan on medium-low for 20–25 minutes, lifting the malai (skin) that forms into a small bowl; reduce by about a third, then cool.

Whisk the fresh curd with the collected malai, sugar, black salt and cardamom until smooth.

Fold in the fruits; chill 30 minutes.

Serve cold in small bowls, the pachadi should be eaten the day it is made.
In the tradition
Pachadi in this family’s version is less the Kerala coconut-yogurt curry and more a celebration of milk: boiled patiently for its cream, then cultured into curd and sweetened with fruit. The black salt is the quiet masterstroke, a savoury shadow under the sweetness that keeps it from cloying.
