Take off the heat; stir in the cardamom, cinnamon and ghee, and sweeten lightly with jaggery if liked.
-
Serve warm, ayurveda favours breakfast warm and freshly made over cold or reheated.
In the tradition
Ayurveda treats breakfast not as the day’s biggest meal but as a gentle kindling of the digestive fire (agni), which is just waking at dawn. Warm, moist and lightly spiced grains are the classic choice, precisely the qualities that settle vāta, the cold, dry, mobile dosha that accumulates towards autumn and winter. Cardamom and cinnamon are traditionally held to kindle digestion without the heat of chili or mustard.
