Dry-Roasting Spices

Toasting whole spices in a dry pan before grinding — the difference between flat and alive masalas.

South Indian masalas — sambar powder, saarina pudi, rasam powder — begin with whole spices toasted in a dry pan until they darken a shade and the kitchen changes smell. The roasting drives off moisture and wakes the volatile oils, so the ground blend keeps both aroma and shelf life.

Each spice has its moment: coriander seeds the longest, chilies and lentils shorter, coconut (for blends that take it) until gold, sesame and poppy seeds watched closely because they scorch. Cool completely before grinding, or the powder cakes. The same logic, done in oil, is a different flavour — frying spices is roux-adjacent, roasting them is clarification.
